I would bet the rent money that this bitch has other flaws.
If you are paying why would you settle and wonder until the dog matures what she will turn out to be, just go to a rescue and adopt.
From what I am reading here it sounds like the bitch was bred for her temperment and backing ability. The breeder is aware of the flaw(s) and is trying to rectify it (them). What is the plan after this litter? I would consider the second or third litter from this line and not this first one.

"Oh Crap, She's Up!"

Pixie bee, your right, but if he's breeding because of her backing ability,,, I say"What backing ability?" He say's that she backs at 2yrs of age, and at 30 ft, I'm not impressed, and for that alone & personality is not a reason to breed a dog,, I bet their are alot of mixed/gundogs in the pound with great personality that could do the same thing.
If your looking for a GSP with a certain look, you'll be better off buying or rescueing an older dog.
Or buy from a show/ hunting breeder that breeds for the breed standard, and the hunting ability. There are plenty of great reputable breeders out there

That a two year old will back isn't surprising.  It certainly doesn't show any natural ability.  Below are three four month old pups.  None has ever been on a check cord, worked on a planted bird, nor worn an e collar.  The picture was taken about six weeks ago or so.

The lead pup is the only one that could have possibly smelled or seen a bird, the other two are "backing naturally".  This isn't something amazing, it's pretty common with well bred GSP's.

I'm not saying that there's anything wrong with the bitch, but you are being sold a bill of goods, or a steaming shovel full as to this wonderful "natural backing at the age of two".  By the time dogs get to the SR test level (lots of dogs can pass a SH test at 2) or adult field trial stakes (which starts at the age of two) backing is an absolute requirement, not something seen as "special".

There's a reason I like dogs better'n people... .
